UCR's Delta Lambda 40th Birthday Celebration

UCR Delta Lambda 40th Birthday Celebration.
On Saturday, January 23rd, we at Lasting Memories had the privilege of catering the 40th Birthday Celebration of University of California, Riverside's Delta Lambda chapter of the Gamma Phi Beta Sorority. Held at the private residence of Perri & Emery, two wonderful previous clients of ours, they hosted 50 Sorority Alumnae and 100 current Sorority members to celebrate 40 years of Delta Lambda!

Pete's Firehouse BBQ

Pete's company based out of Temecula, CA.
Some of you may know that our Executive Chef Phil works full-time for the Riverside County Fire Department. At this job, he has made many connections, one of which is fellow colleague and friend, Pete, who owns and operates with his family the multifaceted Pete's Firehouse BBQ in Temecula, CA. They are a catering company and an award winning BBQ competition team, who sell their BBQ rubs and sauces online! They are even an authorized dealer for Traeger Wood Pellet Grills! How awesome is that?!
Pete, the owner of Pete's Firehouse BBQ.
Pete's Firehouse BBQ Sauce and Rubs.
Two weeks ago, during the week of January 4th, 2016, two of our Fresh and Fit Meal Prep meals featured Pete's Firehouse BBQ meats. These meals included the BBQ Tri-Tip Salad and the BBQ Pulled Pork. We love being able to partner with our friends in business endeavors, and we saw a perfect opportunity here with Pete's Firehouse BBQ meats and Chef Phil's culinary finesse. We hope you loved these meals as much as we did!

Our excitement for Pete's products are so strong, that we plan to use them again in the near future with our Fresh and Fit Meal Prep meals! Make sure you keep an eye out for it!

Cultural Coming-of-Age Celebrations

When a person hits a big milestone in their life, whether it be a wedding or a birthday, a celebration is usually held in their honor and the festivities are shared with their loved ones. Around the world, different cultures celebrate these milestones in unique ways. In this blog, we are going to briefly highlight two different cultural celebrations to show the similarities and differences among them. The last celebration discussed, a Filipino Debut, is one we had the honor of experiencing on January 9th.

Quinceañera - Latin America
Photo found on Google.
A quinceañera marks the transition of a girl from childhood to young adulthood in many Latino cultures. At the age of 15, a young woman is presented as an adult who is ready for marriage. For the purposes of this blog, the quinceañera celebrations of Mexico will be discussed. On her quinceañera, the young woman wears an elegant ballgown, and has a court of damas (girls) and chambelanes (boys) who accompany her. Usually beginning with a religious ceremony, a young woman is presented with a ceremonial rosary or locket/pendant and a tiara, and then a formal reception is held. This reception usually consists of a formal entry, a toast, a first dance, a general dance, and a meal. There are also other traditions, like the "Change of Shoes" where the young woman is presented with her first pair of high heels, signifying her transition to a woman. While there are many other traditions that can be present at a quinceañera, the main purpose of this celebration and all of its traditional rights is to honor the young woman officially as an adult.

Debut - Philippines
Birthday Wishes to Angelina Rodriguez at her Debut.
This past weekend, we had the pleasure of catering the Debut of Angelina Rodriguez at the Chaffey College Chino Community Center. A Debut is a traditional Filipino celebration which celebrates the 18th birthday of a young woman, signifying her coming-of-age and the Debut serves to officially introduce her to the world as an adult. A debut is filled with many traditional rites of passage which focus on the number 18.

Angelina, as the debutante, has a court of 18 selected individuals. After a prayer, the debutante and her court enter into the ceremony space to preform traditional dances for the guests. Some other traditional aspects of a Debut include the "18 Roses Dances", where 18 males present the debutante with a single red rose and then dance with her. There is also a "Father-Daughter Dance", the "18 Candles" where 18 females give a speech about the debutante, and finally at the evening's end, the debutante gives a speech to her guests.

At Angelina's Debut, we served the guests Italian cuisine, at the debutante's request. Appetizers included stuffed mushrooms and meatballs, served by our staff. The main course consisted of caesar salad, baked ziti with and without sausage, garlic mashed potatoes, and a vegetable trio. For desserts, the guests were treated to cake and a candy dessert bar. Musical entertainment for the evening was provided by Pro-Style Sound and videographer Damon Russel of CCD Media caught all the special moments throughout the evening.

To Conclude
Both a Latino Quinceañera and a Filipino Debut are a celebration of a girl turning into a woman, a woman who is ready to take on the responsibilities of young adulthood. While each culture has their differences, both celebrate the woman turning an age of maturity and each respective celebration has many traditional rites of passage which introduce the woman to the world. We enjoyed our time at Angelina's Debut, and hope we have the chance to experience more cultural celebrations in the near future!

Fun, Non-Traditional Cocktail Hour Eats and Drinks

Photo found on Pinterest.
When you hear the words "Cocktail Hour", a few images may come to mind. These images can include standard food items like meatballs, shrimp skewers, or cheese and crackers. As for drinks during cocktail hour, there is always the go-to hard liquor and wine.

Your wedding however is a time to be creative. It is a chance to showcase exactly who you and your partner are! What a better way to do this then through the food and drink you pick for your guests! While some venues have a menu you have to stick to, if you have the option to be unique, we at Lasting Memories Events and Catering say go for it. Your unique food and beverage options will stick out in the minds of your guests, making your wedding a hit.

In this blog, we are going to highlight a few fun and non-traditional cocktail hour items that are sure to wow your guests. These interactive ideas will get your guests out of their chairs and socializing with others.

IDEA #1: POPCORN BAR
Photo found on Pinterest.
Popcorn isn't only for the movies. It can be for your wedding too! Fun for both adults and children, a popcorn bar allows your guests to be creative. Sweet, salty, you name it, it probably can be done with a popcorn bar. Place the popcorn in buckets, bags, a popcorn machine, glass bowls, or whatever else you like, it's your day! Make sure to give some flavoring options as well to sprinkle on top.

IDEA #2: COFFEE AND DONUTS BAR
Photo found on Pinterest.
You may be thinking, coffee and donuts are for dessert, not for a cocktail hour, and you have a point there. However, it works for a cocktail hour as well! If you are having an early morning wedding, this is a great way to say thank you to your guests for coming early. Plus, donuts and coffee are good at all hours of the day. This idea is both adult and child friendly, and to make it even more child friendly, a hot chocolate bar can be added as well. Pick a variety of donuts and coffee, and your guests will definitely be happy.

IDEA #3: CHAMPAGNE/MIMOSA BAR
Photo found on Pinterest.
Champagne is a typical wedding drink, but you can make it more exciting by turning it into a Champagne/Mimosa Bar! A variety of fresh fruit and juices turn ordinary champagne into delicious drinks for your guests. While this is for adults, you can make a child friendly option with sparkling cider, fruit and fruit juices.

IDEA #4: Beer Bar
Photo found on Pinterest.
Instead of bottled or canned beer, a beer bar with selected beers on tap is a great option for beer lovers. This is even a great option if you make your own beer at home, and want to share your talents with your guests. Great in a rural setting, a beer bar with glass mason jars is sure to stand out.

We hope you enjoyed these different cocktail hour ideas, and have found some inspiration for your own wedding or event. Let us know in the comments if you have any other ideas, or have implemented a non-traditional food or drink item into your own wedding!

Jessica and Conor 11-29-15

Decorating the bow of the Newport Princess.
On Sunday, my cousin Jessica married her love, Conor, on the Newport Princess in Newport Beach, California. This classic style boat is part of the fleet of private yachts owned by Electra Cruises, and we at Lasting Memories Events had the privilege of decorating the boat and creating all the floral details! This unique wedding venue lead Jessica to choose a nautical theme and the colors navy blue, coral, and white. Her mom, my Aunt Mo, used her creativity in so many DIY projects for her daughter's wedding. You can see the creative gene just runs through our blood! It was so much fun to see their vision come to life and such a pleasure knowing I could take some of the stress away for the day.

Aisle and Chair Decor.
Aisle Decor.
Our Executive Florist, Sandi, my mom, Mo's sister, and Jessica's aunt, made all the centerpieces, arrangements, corsages, and boutonnieres, while I took on the bouquets. Flowers were purchased from Mayesh Wholesale Florist, Inc. and Sandi created each floral masterpiece with care in her home studio. On Sunday, we delivered all the bouquets, corsages and boutonnieres to the bridal party at their hotel, the Marriott at Newport Beach (my cousin, Ryan, Jessica's brother, works for the Marriott chain; we keep it all in the family! Lol). We then proceeded to the Newport Princess to get the boat ready for the big event!

Navy Blue and Coral Arrangements. The unique unity ceremony Jess and Conor did with....yes rum and coke! Gotta love it!
One of the corsages.
This was a very small, intimate wedding, with approximately only 70 guests in attendance. Jessica and Conor wanted to celebrate their special day with their most immediate family and closest friends, creating a special, loving environment. The couple did a first look before walking down the aisle, and Nico Photo Studio was there to capture this, along with all the other special moments from their big day! Pastor Bill Schellenberger married the couple as the Newport Princess cruised the Newport Harbor. After the ceremony, musical entertainment was provided by Austin Murray Entertainment. All catering and bar services were provided by the staff of Electra Cruises.

The wedding cake.
We were so happy to help make their special day a little more stress free. Helping our family and loved ones on their big day is something we truly cherish, and we hope Jessica and Conor had as much fun as we did, if not more! Grandma was full of smiles in heaven Jess, just admiring the beauty of your day and the hard work your mom put into so many details. We love you all and welcome to the family Conor! There's no escaping now! Ha ha!

Congratulations Jessica and Conor, and many blessings!

Maria and Jesse 11-21-15

Banquet room set-up at Chaffey College Chino Community Center in Chino, CA.
This past Saturday, we had the honor of catering the wedding of Maria "Vivi" and Jesse at the Chaffey College Chino Community Center, a venue where we are one of the preferred vendors! We love catering weddings here, and have been doing so since 2013. One of the great things about catering events here is working with Rita Elias, the Event Coordinator at the Community Center. Before we get into the details of the delicious food for the wedding prepared by our Executive Chef, we wanted to introduce you to Rita and to the Chaffey College Chino Community Center, so you can learn some more about this wonderful venue and the amazing Rita!

We interviewed Rita to learn all the details about the center, herself, the process a catering company must go through to become a preferred vendor here, and what she likes most about working with us at Lasting Memories Events and Catering!

1. Describe the Chaffey College Chino Community Center and the benefits of having an event at this location.
The Chaffey College Chino Community Center is a beautiful, contemporary event location in Chino, California. The benefits of having an event here are many! This event location allows outside catering, there are no minimums, the location is private, and it has free parking. Also, the space accommodates small and large parties, with various packages available. Clean-up is included in all packages, and events are able to be scheduled until 12:00AM.

2. How long have you been working here and what is your favorite part about your job?
I've been working here for three and a half years. I enjoy working with clients, and helping them create and then execute their special occasions.

3. How many events a year does the Chaffey College Chino Community Center hold?
We hold approximately 50 to 60 events per year.

4. Can you briefly describe the process a catering company must go through to become an approved caterer for the center?
First, we see the caterer in action and call their references. Second, paperwork is completed. Third, we collect the caterer's Certificate of Insurance. Finally, a contract is signed.

5. Do you have any words of advice for clients looking for a venue for their event?
Our venue can accommodate different types of events and we can customize packages to the client's preferences.

6. What is your favorite thing about working with our company, Lasting Memories Events & Catering?
Lasting Memories Events is wonderful! They are very professional, punctual, and the food is delicious. The staff is also very well trained and very knowledgeable.

Table set-up by Lasting Memories Events and Catering.
Now that you are more familiar with this venue and Rita, let's dive right into the delicious eats for the evening! Maria and Jesse had approximately 140 guests at their wedding, and they wanted to make sure everyone was treated to delicious food. Upon our arrival, Lasting Memories Events and Catering staff placed all chargers, napkins, silverware, water goblets, and champagne flutes at each table with care, making sure everything looked absolutely beautiful for Maria and Jesse!
Fig & Caramelized Onion Flatbread Pizza.
During cocktail hour, three appetizers were served by our staff. These appetizers included our famous BBQ Beef Meatballs, Meat Lovers Flatbread Pizza, and Fig & Caramelized Onion Flatbread Pizza. So yummy! Before the main course, the guests were served a fresh Caesar Salad. Then for dinner, the children in attendance were presented with a plate of Chicken Fettuccine Alfredo, french fries, and fresh fruit. As for the adult guests, they were treated to a main course of Chicken Chardonnay, Garlic Mashed Potatoes, Roasted Vegetables tossed in a Pine Nut Pesto, and a soft dinner roll. Everything was very fresh and tasty!

We had a great time serving Maria, Jesse, and all of the guests. We love being able to provide scrumptious food to our clients on their big day, helping to make delicious memories for them that will last a lifetime! Thank you Maria and Jesse for allowing us to be a part of your special day, and thank you to all the vendors, and the Chaffey College Chino Community Center staff. It was great working with you all.

Meet our Executive Chef!

Photo courtesy of Milisa Smith of LOVE with FLARE Photography.
Phillip Bardos is the Executive Chef of Lasting Memories Events and Catering. In this post, we are going to introduce you to Phil, and our new meal prep program, Fresh and Fit.

We interviewed Phil to learn more about him.

1. When did you first show an interest in cooking?
When I was younger, my mom was always in the kitchen. She always made dinner and we never went out to eat. I remember one night, it was make your own pizza night, and it was a lot of fun! Also, I remember watching “Great Chefs of the West” on television one night. Seeing the chefs with their tall hats and fancy words about foods I never know about, sparked an interest. I wanted to try new foods and learn about what they were talking about.

2. How long have you been cooking for, both personally and professionally?
Personally, for over 30 years. Professionally, about 6 ½ years.

3. What is your absolute favorite thing to cook?
I would have to say flat-bread pizzas because it's fun to mess around with different ingredients, especially with items you wouldn’t think of putting on a pizza normally, like stone fruit and exotic cheeses, or arugula and pomegranate seeds. Your imagination is your only limitation. Plus it tastes good, so there is that!

4. Do you have a career highlight?
We catered a wedding in Phoenix, Arizona and we had three different food stations. I literally took everything but the kitchen sink with us, and it was a decent size wedding with a fairly complicated menu. We pulled it off with just myself, my father-in-law, and an 18-year old sous chef. I learned that I can cook anything, anywhere, as long as I plan ahead.

5. What would you say is your signature style?
I like to take common food and recipes, and spice it up a bit. By “spice it up a bit”, I mean make it fancy! Presentation is key. People eat with their eyes first, and then their taste-buds.

6. What are your goals as a chef?
I would like to refine my skills. I would like to go back to school, and refine those basic skills, such as making mother sauces, working on my knife skills, etc. But ultimately, I would like to build a legacy for my children and my family through the business.

7. What is one thing you would want a client to know before picking a chef/and or food for their event?
It's important for clients to have a chef that is willing to accommodate their tastes, and can change the menu to meet their expectations. We can all stick to menus, but in the end, it's cool to sit down, talk with the chef, and discuss what your favorite food items are at restaurants you typically go to or what you eat at home, and then have the chef create a menu to your tastes. It's your day, so you need to be happy.

Fresh & Fit Meal Prep by Lasting Memories Events & Catering.
Now that you are more familiar with Phil, we will share with you a glimpse into one of his days preparing food for Fresh and Fit. When we interviewed Phil earlier, he stated that his inspiration behind the program came from the gym he attends. He stated:
"I go into the gym and see people work out for hours, only to reach plateaus in their fitness goals. It all comes down to the diet you keep when you leave. My love for cooking, along with a healthy approach to food, led to the decision to start the program. Most of the meal prep you see now is bland and lacks creativity. It’s so easy to take a normally unhealthy option, and make it healthier, while tasting so much better at the same time."
Clockwise from top left: Steak Salad, Thai Turkey Burger, and Roasted Lemon Sage Chicken Breast.
The meal prep process begins when Phil goes to the local stores and sees what items are fresh, local, and currently in season. He never buys anything frozen, processed, or boxed, so what you are getting is wholesome, fresh foods. Phil stated that is why they deliver a few times a week, because he wants to make sure you are getting the absolute best and fresh flavors! After shopping, Phil creates a weekly menu based on the fresh items purchased and gets working.
Look at those knife skills!
Once in the kitchen, Phil starts cleaning and prepping all the food. Each item is handled with care and is meticulously prepped to Phil's high standards. Once everything is ready, Phil begins cooking, filling the kitchen with wonderful aromas that make your mouth salivate.
Baked acorn squash, fresh out of the oven!
After everything has been cooked, he begins assembling each item into meal containers, making sure the presentation is just as wonderful as the taste. Once everything is assembled, your delicious food is delivered straight to your doorstep in a cooler bag for convenience.

We hope you enjoyed getting to know Phil and learning all about Fresh and Fit! Interested in ordering our Stuffed Acorn Squash, the Napoleon of Grilled Vegetables, or any of the other delicious meals seen in this blog? Check out Fresh and Fit Meal Prep on our website, and make sure you get your order in by this Friday through our Market Place! Remember, whether you are focused on clean eating or just have a desire to start eating healthier, our high protein, low carb meal preparation can help elevate your goals.
