UCR's Delta Lambda 40th Birthday Celebration

UCR Delta Lambda 40th Birthday Celebration.
On Saturday, January 23rd, we at Lasting Memories had the privilege of catering the 40th Birthday Celebration of University of California, Riverside's Delta Lambda chapter of the Gamma Phi Beta Sorority. Held at the private residence of Perri & Emery, two wonderful previous clients of ours, they hosted 50 Sorority Alumnae and 100 current Sorority members to celebrate 40 years of Delta Lambda!

Upon arriving, the attendees were welcomed by a sweetly decorated check-in table, featuring Gamma Phi Beta gear and photos, along with adorable handmade name tags made by current Sorority members. When walking into the event space, a beautifully decorated tent featuring whites, browns, golds, and pinks invited them in. The tent, table, and chairs were provided by Reliable Eventz. The lighting, linens, floral centerpieces, and dinnerware were provided by us at Lasting Memories Events & Catering.

The first to arrive were the Sorority Alumnae, who were treated to some alcoholic refreshments and appetizers. The appetizers included our delicious Bruschetta Crostini and our famous BBQ Meatballs. After about an hour, the current Sorority members joined in on the festivities and were also presented with the appetizer options. Fresh lemonade and iced tea were made available to everyone throughout the evening.

Before dinner, the past and present Sorority members could be heard discussing and reminiscing about their wonderful memories of being involved with the Sorority. Perfect Shot Photo Booth was there to capture all the fun and provide the guests with a festive, commemorative photo strip.

For dinner, there were two main entrees the attendees could pick from: Chicken Piccata and the gluten free, vegetarian friendly Zucchini Noodles with Creamy Avocado-Cucumber Sauce topped with toasted pine nuts and cherry tomatoes.

As for side dishes, Chef Phil prepared a yummy spring mix salad topped with blueberries, feta cheese, and almond slivers, served with a vinaigrette dressing. There were also Sauteed Green Beans with almond slivers and Garlic Mashed Potatoes. After dinner, the Alumnae and present Sorority members were treated to a slideshow commemorating 40 years of the UCR Delta Lambda chapter of Gamma Phi Beta. More photo booth fun and conversation followed.

Pete's Firehouse BBQ

Some of you may know that our Executive Chef Phil works full-time for the Riverside County Fire Department. At this job, he has made many connections, one of which is fellow colleague and friend, Pete, who owns and operates with his family the multifaceted Pete's Firehouse BBQ in Temecula, CA. Cultural Coming-of-Age Celebrations


When a person hits a big milestone in their life, whether it be a wedding or a birthday, a celebration is usually held in their honor and the festivities are shared with their loved ones. Around the world, different cultures celebrate these milestones in unique ways. In this blog, we are going to briefly highlight two different cultural celebrations to show the similarities and differences among them. The last celebration discussed, a Filipino Debut, is one we had the honor of experiencing on January 9th.

A quinceañera marks the transition of a girl from childhood to young adulthood in many Latino cultures. At the age of 15, a young woman is presented as an adult who is ready for marriage. For the purposes of this blog, the quinceañera celebrations of Mexico will be discussed. On her quinceañera, the young woman wears an elegant ballgown, and has a court of damas (girls) and chambelanes (boys) who accompany her. Usually beginning with a religious ceremony, a young woman is presented with a ceremonial rosary or locket/pendant and a tiara, and then a formal reception is held. This reception usually consists of a formal entry, a toast, a first dance, a general dance, and a meal. There are also other traditions, like the "Change of Shoes" where the young woman is presented with her first pair of high heels, signifying her transition to a woman. While there are many other traditions that can be present at a quinceañera, the main purpose of this celebration and all of its traditional rights is to honor the young woman officially as an adult.

Debut - Philippines
Birthday Wishes to Angelina Rodriguez at her Debut.
This past weekend, we had the pleasure of catering the Debut of Angelina Rodriguez at the Chaffey College Chino Community Center. A Debut is a traditional Filipino celebration which celebrates the 18th birthday of a young woman, signifying her coming-of-age and the Debut serves to officially introduce her to the world as an adult. A debut is filled with many traditional rites of passage which focus on the number 18.

Angelina, as the debutante, has a court of 18 selected individuals. After a prayer, the debutante and her court enter into the ceremony space to preform traditional dances for the guests. Some other traditional aspects of a Debut include the "18 Roses Dances", where 18 males present the debutante with a single red rose and then dance with her. There is also a "Father-Daughter Dance", the "18 Candles" where 18 females give a speech about the debutante, and finally at the evening's end, the debutante gives a speech to her guests.

At Angelina's Debut, we served the guests Italian cuisine, at the debutante's request. Appetizers included stuffed mushrooms and meatballs, served by our staff. The main course consisted of caesar salad, baked ziti with and without sausage, garlic mashed potatoes, and a vegetable trio. For desserts, the guests were treated to cake and a candy dessert bar. Musical entertainment for the evening was provided by Pro-Style Sound and videographer Damon Russel of CCD Media caught all the special moments throughout the evening.

To Conclude
Both a Latino Quinceañera and a Filipino Debut are a celebration of a girl turning into a woman, a woman who is ready to take on the responsibilities of young adulthood. While each culture has their differences, both celebrate the woman turning an age of maturity and each respective celebration has many traditional rites of passage which introduce the woman to the world. We enjoyed our time at Angelina's Debut, and hope we have the chance to experience more cultural celebrations in the near future!

Fun, Non-Traditional Cocktail Hour Eats and Drinks

When you hear the words "Cocktail Hour", a few images may come to mind. These images can include standard food items like meatballs, shrimp skewers, or cheese and crackers. As for drinks during cocktail hour, there is always the go-to hard liquor and wine.

Your wedding however is a time to be creative. It is a chance to showcase exactly who you and your partner are! What a better way to do this then through the food and drink you pick for your guests! While some venues have a menu you have to stick to, if you have the option to be unique, we at Lasting Memories Events and Catering say go for it. Your unique food and beverage options will stick out in the minds of your guests, making your wedding a hit.

In this blog, we are going to highlight a few fun and non-traditional cocktail hour items that are sure to wow your guests. These interactive ideas will get your guests out of their chairs and socializing with others.

IDEA #1: POPCORN BAR

Popcorn isn't only for the movies. It can be for your wedding too! Fun for both adults and children, a popcorn bar allows your guests to be creative. Sweet, salty, you name it, it probably can be done with a popcorn bar. Place the popcorn in buckets, bags, a popcorn machine, glass bowls, or whatever else you like, it's your day! Make sure to give some flavoring options as well to sprinkle on top.

IDEA #2: COFFEE AND DONUTS BAR

You may be thinking, coffee and donuts are for dessert, not for a cocktail hour, and you have a point there. However, it works for a cocktail hour as well! If you are having an early morning wedding, this is a great way to say thank you to your guests for coming early. Plus, donuts and coffee are good at all hours of the day. This idea is both adult and child friendly, and to make it even more child friendly, a hot chocolate bar can be added as well. Pick a variety of donuts and coffee, and your guests will definitely be happy.

IDEA #3: CHAMPAGNE/MIMOSA BAR

Champagne is a typical wedding drink, but you can make it more exciting by turning it into a Champagne/Mimosa Bar! A variety of fresh fruit and juices turn ordinary champagne into delicious drinks for your guests. While this is for adults, you can make a child friendly option with sparkling cider, fruit and fruit juices.

Instead of bottled or canned beer, a beer bar with selected beers on tap is a great option for beer lovers. This is even a great option if you make your own beer at home, and want to share your talents with your guests. Great in a rural setting, a beer bar with glass mason jars is sure to stand out.
